Before I get stuck into my delicious recipe for Beef Teriyaki Stir Fry I want to highlight the benefits and versatility of Pura Coconut Oil and why I use it in my day to day cooking.
Pura Coconut Oil is a versatile blend of coconut oil, hi-oleic sunflower oil and rapeseed oil allowing you to use it every day for roasting, frying and basting at high temperatures.
Coconut oil has had a lot of attention in the press recently which has possibly placed some doubt in the mind of consumers. However with Pura Coconut oil I feel confident that I’m getting great quality cooking oil with additional benefits.
The blend of the 3 oils in Pura Coconut oil means:
You can cook at higher temperatures safely
Pura Coconut oil is lower in saturated fats than traditional coconut oil
High in mono-unsaturated fats which helps the body to maintain normal blood cholesterol levels
The rapeseed oil means Pura Coconut oil is rich in omega 3, an essential fatty acid
Pura Coconut has no coconut flavour making it versatile for all dishes
Now, despite all the benefits of Pura Coconut oil, I still advise you guys to use it mindfully, this oil is full of good fats but it’s still fat so don’t abuse it. In fact they have a Spray Coconut oil blend which is a perfect way to manage the quantities you use in your cooking.
For my recipe the liquid coconut oil blend or spray coconut oil blend are ideal and you only need a teaspoon or several squirts in a hot pan. See below for the full recipe.
Beef it up Teriyaki Stir-Fry
120g of buckwheat noodles
1 x tsp of Pura Coconut Oil Blend
300-400g of lean frying steak or flat iron steak
1 x packet of stir-fry vegetables (400g bag) or pick your favourite Asian style veggies
½ tsp of sesame seeds
3 ½ tbsp of tamari or low salt soy sauce
2 x tbsp of honey
3cm long piece of fresh ginger grated
1 x garlic clove crushed or finely chopped
2 x tbsp of mirin or sake (optional)
Start by making the teriyaki sauce. Add all of the ingredients to a small saucepan and put over a medium-high heat. Bring to the boil, then reduce the heat and simmer gently until thickened. Set aside.
Add the noodles to a pan of boiling water and cook for about 6 minutes – check packet for instructions.
In the meantime, add the coconut oil blend to a hot wok and add the seasoned beef. Stir fry for around 2 minutes, you don’t want to overcook it. Remove and set aside.
Add the vegetables to the same pan and stir fry for about 5 minutes; you may want to add a tbsp of water to help stem and soften the veg.
Add the noodles to the veg and toss then add the beef and pour over the sauce and toss again.
